Zutaten
Für den Teig:
100 g Magerquark
1 Packung Backpulver
50 g Zucker
4 EL Öl
4 EL Milch
1 Ei
250 g Mehl
Für den Belag:
200 g Rosinen (kann weggelassen werden)
1 l Milch
3 Pkt. Puddingpulver, Vanille
2 Eier
6 EL Zucker ( oder mehr )
600 ml Schmand
Zubereitung
So geht es:
1. Als erstes das Zucker Ei, Milch Quark und Öl zusammen mischen. Dann das Backpulver und das Mehl mischen und mit der Quarkmasse verkneten. Den Backblech gut einfetten (Fettpfanne nehmen, Kuchen geht stark auf), Teig darauf ausrollen.
2. Nun dür den Pudding Belag etwas Zucker, Milch, Puddingpulver und Eiern verrühren, die restliche Milch aufkochen, Mischung einrühren und kurz aufkochen lassen. Vorsicht sein – sorgfältig rühren, brennt sonst an! Die Masse wird sehr fest. Pudding handwarm abkühlen lassen, dabei immer wieder durchrühren.
3. Mittlerweile die Rosinen waschen, eventuell einweichen, abschütten und zur Puddingmasse geben. Jetzt den Schmand mit dem Mixer alles mal gut unterrühren und auf dem Teig verteilen.
Als letztes bei 170 Grad ungefahr 1 Stunde hell backen. Wirklich unglaublich lecker!
